Hi, I’m Kelli.  Welcome to No Calorie Left Behind!

Everybody has a story to tell; mine just happens to be about food.  Since I was a little girl, I’ve had a growing infatuation with all things culinary.  Flavors, smells, the sight of a perfectly plated dessert, the crackle-pop of onion thrown into a hot pan, and the beautiful history behind each and every dish.  I believe that food is one of the most important things that brings people together.  It nourishes our bodies and our souls.  I love to be around good food, and I want to share that love through my stories.

I read my first food blog about six years ago, and it began an intense obsession.  My craving for a good food story is never satisfied.  High school study halls were spent in front of a computer screen, learning everything I could about the methods, science, art, and love of food.  At home, I experimented in the kitchen, taking over the duty of making dinner and baking sweet treats on the weekends.  Now that I’m in college, I have learned to adapt to smaller kitchens and stubborn stoves.  I’ve learned to cook for one instead of four, and that there’s no shame in cooking for oneself.  I also decided it was finally time to record my own stories in the blogosphere.  Armed with passion, olive oil, cookbooks, and a little creativity, I have begun this journey.  I’m so excited to share the love of food on No Calorie Left Behind!

Why No Calorie Left Behind?  Because food is a pleasure and should be treated that way.  No, I don’t think it’s ok to eat fries, cookies, and cake every single day.  I also don’t think it’s right to view unhealthy food as the only kind that is pleasurable.  After all, there is nothing so satisfying as a perfectly ripe peach, and the sweet tang of greek yogurt swirled with honey can rival ice cream.  A crunchy salad topped with warm salmon and sliced mango is no less exciting than a rich pot of beef bourguignon simmering slowly on the stove.  Yet, who can deny the pleasure of dense chocolate cake or a loaded turtle sundae?  It’s all good, and every flavor is unique.  With moderation and an open mind, there’s no reason that any calorie should be left behind.
